3-Step Pad Thai
Thailand's most beloved street food — tangy, savoury, and slightly sweet — made at home in 15 minutes with rice noodles, a bold tamarind sauce, and a scatter of toasted peanuts for crunch.
Ingredients
- 1 packet Blue Dragon 3-Step Pad Thai Kit
- 400g chicken, shrimp, or tofu
- 1 tbsp vegetable oil
- Lime wedges, to serve
- 1 tbsp fresh cilantro, chopped
Instructions

1Cook the rice noodlesBoil 1 litre of water with ½ tsp salt. Add the rice noodles and cook for 4–5 minutes. Drain immediately and rinse under cold water for a few seconds to stop the cooking and keep them springy.Don't skip the cold rinse — it prevents the noodles from clumping and keeps them perfectly textured for the wok.

2Stir-fry the protein & sauceHeat 1 tbsp oil in a wok or frying pan on high heat. Cook the meat, shrimp, or tofu for 3–4 minutes. Add the tamarind sauce from the kit, toss in the noodles, and stir vigorously for 1 minute until well coated.

3Add herbs, spices & garnishScatter in the dry herbs & spices from the kit and keep stirring until every noodle strand is evenly coated. Plate up and top with fresh cilantro and a wedge of lime to finish.
Make it your own
- Bulk it out with extra veggies — bell peppers, pak choi, or snap peas all work beautifully.
- Stir in 1 cup of bean sprouts while cooking for an authentic street-food crunch.
- Finish with toasted chopped peanuts before serving — adds texture and a nutty depth that makes the dish.
