Blue Dragon Pad Thai – Authentic Thai Street Food in 3 Easy Steps
Serves 2 | Quick & Easy Pad Thai Recipe

Ingredients:

1 tbsp vegetable oil
1 Blue Dragon Pad Thai Meal Kit
200g tofu, cut into pieces
A handful of beansprouts
2–3 spring onions, sliced
½ fresh lime, juiced
Blue Dragon Soy Sauce & palm or caster sugar (to taste)

Step 1: Cook the Noodle
Boil water in a pan, add a pinch of salt, and cook the rice noodles for 4 minutes or until soft. Rinse in cold water, drain, and set aside.

Step 2: Sizzle the Tofu
Heat a wok until smoking hot, add a splash of oil, and stir-fry tofu for 2 minutes until lightly golden.

Step 3: Stir-fry & Serve
Add the noodles and Pad Thai paste to the wok and stir-fry for 2 minutes. Mix in most of the peanuts, spring onions, beansprouts, and lime juice. Toss well and serve topped with remaining peanuts and a lime wedge.
