  1. Separate the eggs. Place the egg yolks in one bowl and the whites in another.
  2. Whisk the yolks with sugar until the mixture becomes light and creamy.
  3. Add the mascarpone to the yolk mixture and blend until smooth.
  4. In a clean bowl, beat the egg whites until they form soft peaks.
  5. Gently fold the egg whites into the mascarpone mixture to keep it light and airy.
  6. Mix the coffee and Marsala in a shallow bowl.
  7. Dip each Vicenzovo Ladyfinger Biscuit quickly into the coffee mixture—don’t soak them too long.
  8. In a flat dish, layer the dipped ladyfingers, then spread a layer of mascarpone cream over them.
  9. Repeat the layers until all ingredients are used, ending with a layer of cream.
  10. Dust the top with cocoa powder.
